Raw Food Snack: Recipe for Sesame Balls or ‘Raw Halva’ Dessert

 

Sesame Balls

This is my ‘healthy’ version of Halva, a very popular and traditional Middle Eastern Dessert made with ground sesame and sugar. In this version, we will use raw sesame seeds and raw honey or agave (whichever you prefer). This is a great snack for kids and it’s healthy! Sesame seeds are a great natural vegan source of calcium.

How to Make Halva – Raw Sesame Balls

  1. In a mini food processor, first blend/grind:
    • ½ cup organic raw white sesame seeds
    • small dash of Himalayan Salt
  2. Then add 3-4 Tablespoons Raw honey (or agave nectar) and blend again. Add more sweetener if the mixture is too dry. The mixture should be moist enough to roll into small balls (about the size of a walnut).
  3. Place a handful of whole sesame seeds on a plate and roll each ball (walnut size ball) onto whole seeds to coat the ball with sesame for a nice, appetizing look.

You can decorate each Raw Halva Sesame Ball with goji berries, raisins or dried mulberries. To get even more creative, try adding raw cacao powder for a Raw Chocolate Sesame Ball Dessert…yum!

Serve and enjoy! This recipe is so fast and easy, you will be amazed. I have shared this with family, friends and at raw food potlucks and it is always a favorite.

Super Energy Raw Cabbage Salad Recipe – A mini-detox meal

Featured in this recipe is the Super Energy Salad, one of my favorite Raw Food Salads. I often make this for friends, and they love it too!

The ingredients are easy for you to find no matter where you live in the world.

Super Energy and Super Taste in this yummy raw food creation!

Super Energy Salad (serves 2):

Salad Ingredients:
4 cups Finely Chopped Green Cabbage
1/4 cup Chopped Fresh Parsley
2 Roma Tomatoes, Quartered

Dressing:
Blend together in a Blender or Mini-Food Processor:
1-2 fresh cloves garlic
Juice of 1 lemon
1/4 cup Tahini (if you don’t have, try a nut butter like almond butter)
2-4 tablespoons water or more (to thin dressing if desired)
Pinch teaspoon Himalayan salt (to taste)

Toss cabbage and parsley with the dressing before serving.
Place the roma tomatoes on the side and drizzle some dressing around the plate for garnish and appeal.

Another way to serve this delicious Raw Cabbage and Parsley salad – yum!

This is a great cleansing salad thanks to the healing power of parsley and cabbage. Parsley is an excellent internal cleanser, it’s high in Vitamin C and calcium and is very strengthening for the kidneys.

This is a true cleansing salad, a natural detox, as Mother Nature intended!

Cabbage is a food naturally high in sulfur which makes it a powerful cleanser for the body. Sulfur foods help the body to clear out environmental toxins, chemicals and even some heavy metals. Cabbage is also very good for digestion and for strengthening the colon.

  • 2 Large handfuls of kale
  • 2 lemons, squeezed
  • 1 avocado
  • ¼ cup water

Raw Food Recipe – Delicious Waldorf Salad

WALDORF SALAD Recipe – Vegan & Raw (serves 2)

Yummy Recipe for Raw Food Salad: Waldorf Salad

Ingredients:

  • 2 apples (any style)
  • 3 celery stalks
  • 1/2 cup golden raisins, ideally soaked for 2-3 hours (can replace with dried cranberries as well)
  • 2 cups fresh chopped pineapple or 2 cups green grapes (sliced into halves) or 4 kiwi fruit (peeled and chopped)
  • 1 1/2 cup dried walnuts
  • 1/4 cup fresh green onion (chives) finely chopped
  • 1/4 cup fresh grated carrot

Dressing:

Blend together in a Blender or Mini-Food Processor:

  • 3-4 walnuts
  • 1 Tablespoon sweet mustard (or 1 tsp. dried mustard seeds)
  • 2 Tablespoons organic raw apple cider vinegar
  • 2 Tablespoons organic extra virgin olive oil (or less)
  • 1 1/2 Tablespoons raw honey or 2 soft dates
  • 1 teaspoon Himalayan salt
  • A few Tablespoons of water – to get the consistency you want. (Alternatively you can add some pineapple and apple chunks into the blender)

A delicious raw food lunch!

Toss salad ingredients with your homemade dressing before serving.

This can be eaten as a healthy, filling breakfast or a nice tasty lunch. If you want to serve for dinner, you could serve the salad on a bed of romaine lettuce, just for good presentation.

Note: In this recipe, I don’t soak the walnuts. Their taste is better enjoyed when crunchy, not soft. Of course, you can always do what feels best for you! Enjoy!!

Organic Vegetarian Food & Raw Restaurant in Dubai, UAE

Organic Supermarket & Cafe

Yes! You can be healthy in Dubai…I saw it for myself on a recent trip there! My first stop was at the Organic Foods & Cafe, a cafe and health food store. I was very impressed to see a good selection of organic fruit and veggies and not overly expensive for Dubai. Try the organic mandarin oranges – wow, so delcious! The supermarket has a good selection of superfoods, supplements, vegan foods, gluten-free items, grains, seeds, nuts and vegetarian products.

The Organic Foods & Cafe has 2 locations: the Dubai Mall and the Greens. The Cafe has a nice selection of salads and juices in addition to some vegetarian foods as well. They have a delivery menu for pizza. I asked them if it was possible to order other menu items for delivery and they said ‘yes,’ so don’t be afraid to ask!

In the Dubai Mall, I also managed to find Juice Master, a fresh juice bar that serves juices, smoothies and wheatgrass shots. Finish that with some fresh wheatgrass, and wow…you’ll be ready for the Burj Khalifa (the world’s tallest building)! Jason Vale, otherwise known as the ‘Juice Master,’ is the UK’s best-selling author on juicing and health.

Magnolia Cafe, Dubai UAE

My favorite stop in Dubai was at the Magnolia Cafe in the Madinat Jumeirah Resort. Magnolia is not exclusively raw; it does have cooked vegetarian dishes on the menu.

Every selection is labeled with a V (vegan), N (contains nuts), R (raw) and/or O (diabetic friendly). Gluten-free items are also available upon request. For those reasons, Magnolia is a great choice for anyone with food intolerances or allergies. Be sure to call ahead if you have special dietary requests.

The prices at Magnolia immediately make you remember you are in Dubai, so don’t expect any bargains. But, if you are looking for some gourmet, well-presented raw food dishes, then you won’t be disappointed.

For vegetarians, Magnolia offers cooking classes by Chef Gaby. She offers a class called ‘Rich Flavors – Low Fat’ with Asparagus Jelly, Datterini Tomato Broth, Biarritz Stuffed Baby Peppers and Summer Pudding with Lavender.

Beach Yoga in Dubai

While at the Madinat Jumeirah, be sure to try their Yoga Class on the beach.

It’s a relaxing, beautiful and natural setting right on the beach with a full view of the sea and Burj Al Arab in the distance. The class is one-hour Hatha and Astanga infusion and it’s within the private beach of the resort. They have sunrise and sunset classes, and also offer a 90-minute full moon yoga class.

When you enter the hotel, go to the Talise Spa to register; from there you can either take a buggy or walk to the beach.

Wow! I was so inspired by this movie! Fat, Sick and Nearly Dead show 2 extremely overweight men do a 60-day juice fast, and the results are outstanding!

This documentary shows a real life regular Australian guy named Joe who, at 140 kg or just over 300 pounds, was sick with an auto-immune disease and a strange re-occurance of rash and hives. At 40 years old and feeling fat, sick and nearly dead, he finally decided to take his health in his own hands. Can you imagine, at only 40 years old, being so overweight and in pain from arthritis, that you have to use a raised toilet seat to even sit on the toilet? Or, maybe that’s already you? Then it’s definitely time for some change!

Yes, Joe took responsibility for his own health and decided to completely change his diet and lifestyle!

He embarked on a 60-day juice only liquid fast and not only lost weight, but cleared the rash, gained energy and made a plan to continue with positive change after the detox.

In 60 days, he lost over 80 pounds.

It is phenomenal to see the transformation!

And, even better, Joe continued to make changes when he finished his detox. He started exercising, ate salads and juices, and after another 70 days, he not only maintained the original weight loss but lost another 20 pounds. He also managed to get off all medications – wow, now that is Mother Nature’s doctor at work for some real natural healing!

Along his journey of juice fasting and traveling across the United States on a road trip with the juicer set up to a battery in the back of his car, Joe met a lot of overweight Americans and many had different ideas on fasting. It’s worth watching just to see what they say!

At one point, he meets Phil who is over 400 pounds and has the same skin rash condition as him. Phil gets inspired and eventually does the 60-day juice fast himself.

It’s really spectacular to see these normal people who were previously victims of fast food and prescription drugs and are now teaching people how to juice kale and apples! I love it!!

So, what about actually doing a 60-day juice fast yourself? Is it safe?

In the movie, both men get clearance from their doctors and also regular checkups during the fast. This is definitely a good idea, especially if you have never fasted before, are on any medications of any kind and especially if you are suffering from any medical conditions.

Was Joe constipated after his detox at all??

60 days is a long time to go without any bowel movements. The thing that Joe never mentions in the movie is whether or not he did enemas or colonics during his fast. Since he didn’t mention it, I doubt he did any. This does concern me, especially when I think of how toxic so many people are today and how they could easily lessen the effects of the detox reactions by doing a daily enema during their fast. I would also recommend certain herbs and supplements to support the body during the process.

Re-toxifying of Heavy Metals

The other issue that concerns me is that people doing a long fast with extreme weight loss can disrupt pockets of heavy metal accumulation in their body. Often times the body will safely store heavy metals in it’s fat cells. It’s a way for the body to try to protect itself from these toxic materials. If you have extreme weight loss in a short period of time, as the fat gets burned, the heavy metals have to move somewhere else…and they can potentially move into and do harm to the organs. In an Iridology reading, we can see if a person has the potential for heavy metal accumulation. It’s a good idea to get checked out, and to also consider doing a heavy metal detox as a follow-up to the juice fast. During the fast, it may also be a good idea to take zeolite as this is a natural chelator for heavy metals and toxins and can assist the body with the detox process.

I particularly like the doctor in the film, Dr. Joel Fuhrman. He had some great quotes:

  • Permanent results only come from permanent changes in diet and lifestyle.
  • You don’t get permanently well unless you permanently change the way you live.
  • Fasting can be used as a time where you re-train your taste buds. If it helps you with healthy eating thereafter, then it’s done it’s job.
  • 61% of the American diet today comes from processed foods (predominantly oils, sugar & flour).
  • 70% of the diseases that affect us now are caused by our life choices: how we exercise, if we smoke and what we eat.
  • Total cost of a heart attack: $56,424 USD. Total cost of juicing for 1 month: $420.

Raw Food Slicer Salad Tool – Preparation Made Easy

One of the things that I try to teach in my Raw Food Cooking Class is texture. When you learn to create new textures with raw foods, you can get away from the rabbit-like crunchy salads. Long-term, having different textures to play with will keep your food more interesting and you are much more likely to stay with the raw food diet.

Green Papaya, Daikon & Carrot sliced fast & easy!

The main tool that I use to create the texture of raw pasta is the ‘Som Tam’ or Green Papaya slicer.

This little tool is a must-have for any raw food kitchen.

You can use the slicer to make fast and easy strips for making Traditional Thai ‘Som Tam’ or Green Papaya Salad, but you can also use it to slice carrot, beetroot, cucumber, daikon or zucchini for your raw pasta or just a nice shredded-type of salad.

It takes no time at all to use. I travel with mine all over the world, and no matter where I am, I can make a nice carrot, beetroot, zucchini salad in minutes. In the video above, I show how to use the Som Tam Slicer to make Green Papaya Salad with my friend Ms. Ta from Thai Organic Life.

Sprouting Safety – Preventing e.coli and Salmonella in your Bean & Seed Sprouts

Bean Sprouts source of E.coli?

We still don’t know for sure what caused the deadly e.coli outbreak that resulted in over 30 deaths in Germany recently, but the most recent evidence is pointing at the sprouts from a German farm. Officials are still warning people not to eat sprouts.

The University of California’s Division of Agriculture and Natural Resources research on bacteria and sprouts shows that any contamination in the sprout is likely to come from the seed itself:

‘For most outbreaks, the source of contamination appears to have been the seed. Even if the seed is contaminated, pathogen levels are typically very low, so contamination can easily be missed depending on the nature of the seed-testing program. The best conditions for sprouting are also ideal for multiplication of pathogenic bacteria if they happen to be present on the seed. Even if the seed are only lightly contaminated, Salmonella and E. coli O157:H7 levels can increase to millions of cells per serving during the sprouting process.’

Give loving intention to your sprouts too!

My advice: Buy organic seeds and beans and make your own sprouts at home, using 100% cotton sprout bags. The bags reduce the risk of molds and bacteria because there is no standing water as there can be in jars and trays. When you buy organic seeds, you know you are getting the best, and don’t you deserve the very best quality of foods? Yes!

The benefits of eating sprouts is that they are a live food full of enzyme power and are a great source of protein for the body.

Fresh Lentil & Mung Bean Sprouts

Don’t be afraid to eat sprouts as a result of the e.coli outbreak in Germany; instead just be aware of a better choice which is to make your own sprouts at home.

You can sprout alfalfa, mung beans, lentils, garbanzo beans, pumpkin seeds, sunflower seeds and more . Bringing variety into your diet is a great way to increase your natural mineral reserve!

I personally prefer the cotton bags over nylon bags for spouting because the cotton is more natural and can keep the sprouts just moist enough to grow without any extra or standing water for bad bacterias. The air flow through the bags is also perfect for preventing mold.

Raw Food Breakfast: A healthy start = a healthy, harmonious day!

Here’s a yummy raw food breakfast recipe I made recently:

Raw Food Breakfast Bliss!

Ingredients:

  • 1 chopped apple
  • 1 chopped pear
  • 1/4 cup fresh chopped pineapple
  • 1 orange peeled and chopped

Directions:

  1. Put all fruit in a bowl.
  2. Sprinkle ground flax seed and ground hemp powder on top.
  3. Squeeze fresh lemon or lime juice.
  4. Add soaked goji berries (can soak overnight or for 1 hour minimum). Drizzle the goji berry water onto the mixture as well.
  5. Top with 1 chopped strawberry.
  6. Give love and gratitude to your food during preparation.
  7. Sit and eat consciously.

Watch and experience as a beautiful, energized day unfolds!

Be creative with your breakfast and get out of the Western ideas of what breakfast foods are and aren’t. Un-teach your body away from the unhealthy, poorly food-combined standards of fried eggs, toast and bacon and learn a new way with a new high vibration of raw foods for your body’s inner harmony and joy.

Chopping your fruit and eating it with a spoon makes it feel like a meal and can be much more enjoyable than eating fruits from hand-to-mouth. Take the time to chop into small pieces so that it is easy to eat. Try different combinations and use different superfoods to bring variety into your diet.

Have several ideas for breakfast so you don’t get bored. Try a fruit salad, green smoothie, fruit smoothie or even a raw vegetable salad. Why not?

Variety in your diet will exercise your colon. Having different color vibrations in your food balances out the chakra energies inside. Many reasons not to have cooked, de-vitalized, low vibration white toast. What can your body do with that besides go back to sleep!

Raw Food Recipe: Raw Mustard

Raw Food Bliss!

Fresh Homemade Mustard, Easy!

This is a great recipe if you are looking to remove all food additives from your diet and/or enjoy raw foods in new ways. Normal store-sold mustards can contain artificial colorings, preservatives and thickening agents, not to mention flavor enhancers. Make your own mustard at home and be sure you are eating a fail-safe additive-free natural form of mustard. It tastes even better when made fresh and will cost you less money too!

Mustard Ingredients

  • 1/4 cup organic yellow mustard seeds
  • 1/4 cup organic brown or black mustard seeds
  • 3/4 cup organic Raw Apple Cider Vinegar (or 6 Tbsp. fresh lemon juice)
  • 1/3 cup water
  • 1 1/2 teaspoon Raw Organic Honey
  • 1/4 teaspoon organic turmeric
  • 1/4 teaspoon Himalayan salt

Mustard Recipe Instructions

  1. Soak mustard seeds in water and apple cider vinegar for 24 – 36 hours. Make sure the seeds are covered with the liquid.
  2. Combine mustard seeds and liquid with remaining ingredients in high-speed blender.
  3. Add water to desired consistency.

    Yield: 2 Cups. Will keep in the fridge for a few weeks.

Notes

You can use all yellow mustard seeds if you would like. You can also add herbs and spices to your liking.

2 tomatoes
½ pineapple
1 mango
1 jalapeno pepper
fresh cilantro (coriander)
dash cayenne pepper (to taste)
Chop all ingredients. Enjoy!

Ingredients for Tuna:
½ cup soaked sunflower seeds
¼ cup soaked almonds
2 Tbsp. water
1 ½ Tbs. celery
1 Tbsp. each minced onion, parsley or dill, lemon juice
Tamari (to taste)

Ingredients for Wrap:
2 Nori sheets or fresh lettuce leaves

Ingredients for Garnish:

Fresh sprouts
Thinly sliced peppers of choice
(For a real hardy meal you can also add zucchini hummus or dressing)

In either a blender or food processor: blend water, sunflower seeds and almonds, together so they are well mixed but still a bit course.
Add celery, parsley or dill, lemon, and tamari to the mix.
Then wrap in a delicious nori roll (or fresh lettuce leaf) with or without extras.

Pasta with Marina Sauce

Ingredients for Pasta:
3-4 zucchini or squash, spiralized or shredded using the Raw Food Slicer

Ingredients for Sauce:
2 ½ cups tomatoes and/or red bell pepper (capsicum)
9 sun-dried tomatoes, soaked and rinsed
3 large dates, soaked and rinsed
Fresh parsley, basil and oregano
1 tsp. sea salt
½ tsp. cayenne pepper

Raw Food Yum

Chia Banana Pudding

2 cups fresh almond milk
2 cups chia seeds
½ cup coconut flakes
2-3 bananas

Blend and pour into serving bowls. Chill before serving.

Donut Holes

1 cup almonds (soaked overnight & rinsed)
1 cup dried pineapple (with no added sugar)
1 tsp. vanilla extract
1 cup dates (soaked)
3 heaping Tbsp. dried coconut

Put almonds into food processor and blend. Add remaining ingredients and blend well. Roll into balls and add additional coconut.

Raw Pumpkin Pie (from Alissa Cohen Cookbook)

Ingredients for Crust:
2 cups almonds
1/3 – ½ cup dates, pitted and soaked

Ingredients for Filling:
2 cups shredded pumpkin or butternut squash
1 cup dates
½ cup almonds (soaked) or sunflower seeds
2 tsp. cinnamon
1 tsp. ginger
½ tsp. ground cloves
½ tsp. nutmeg
¼ cup water

To make Crust:
Add all crust ingredients and blend until smooth. Press down into pie plate.

For filling:
Blend until smooth and pour into pie crust. Chill before serving.
